Chili Cilantro and Lime Baked Cod
Dinner for one! I served this with red Thai rice and a spicy black bean/corn side. While I used fresh Pacific cod, any similar type fish will do.
- 125g Pacific grey cod
- 1 tsp chili powder
- 1/2 tsp onion powder
- 1/2 tsp dried cilantro
- 1/4 tsp cumin
- 1 Tbs butter
- juice of 1/2 a lime
- lime zest
- Preheat oven to 450F
- Add chili powder, onion powder, cilantro and lime zest in a bowl…mix well.
- Place cod into bowl with spices, press down turn over and repeat.
- Place cod into small greased (or sprayed with vegetable spray) baking dish, bake at 450F for 10 minutes. Fish should flake apart easily with a fork when done.
A few minutes before the fish is ready, melt butter in small pan with lime juice and cumin. Drizzle over fish just before serving.
